Using wire whisk, stir together baking mix, eggs and milk in large bowl until smooth. Stir in JOLLY RANCHER Sprinkles.
Heat griddle over medium-low heat. Lightly spray griddle with vegetable cooking spray. Using #24 scoop, drop batter onto prepared hot griddle; cook until bubbles appear. Turn; cook other side until lightly browned.*
Serve warm with dollop of whipped cream topping. Sprinkle additional JOLLY RANCHER Sprinkles. Serve immediately.
*You will want to use pancake batter soon; moisture will make the candy 'bleed'.
